What "scaling a recipe" really means
Scaling is just multiplying every ingredient by the same factor so a recipe makes more or fewer servings. The factor is new servings ÷ original servings: doubling a 4-serving recipe to 8 means a factor of 2, while taking it down to 2 servings means a factor of 0.5. - "1 (14 oz) can tomatoes" — a parenthetical size
- "2.5 cups water" — a decimal amount
Lines with no number (like "a pinch of salt" or "oil, for greasing") are left alone rather than mangled, so your list stays readable.
Where straight multiplication needs a human eye
Most ingredients scale linearly, but a few don't, and that's where judgement beats arithmetic. Eggs come in whole units — if scaling gives you 1.5 eggs, you'll usually round to the nearest whole egg, or beat one and use half by weight for precision. Salt, spices, and leavening (baking soda, baking powder, yeast) are best scaled gently and tasted, because doubling them often over-seasons or over-rises a batch. And strongly flavored extras like garlic, chili, or vanilla can taste disproportionately strong when multiplied straight up.
Pan size and bake time don't scale with the recipe
This is the step people forget: doubling the batter does not mean doubling the time in the oven. If you keep the same pan, a deeper layer of batter needs longer and a slightly lower temperature so the middle cooks before the edges dry out. If you move to a bigger pan to keep the depth similar, the time stays closer to the original. Either way, start checking for doneness near the original time and judge by feel — a skewer, a gentle press, internal temperature — rather than the clock alone. Practical tips for big and small batches
When scaling up, make sure your bowl, pan, and mixer can actually handle the bigger volume, and remember a much larger batch can take noticeably longer just to come together and heat through. When scaling down, very small quantities get hard to measure accurately — this is exactly where a kitchen scale and metric weights shine, since "an eighth of an egg" is easier to weigh than to eyeball.
